The Perfect Sauerkraut Recipe
Ingredients:
1 medium green cabbage
Sea salt (2% of the cabbage's weight)
1 cucumber
Pepper to taste
Chopped dill for flavor
Instructions:
Sterilize Your Jars: Wash jars and place them in an oven at 100ºC for 10 minutes. Remove and allow them to cool.
Prepare the Cabbage: Finely shred the cabbage and wash it thoroughly. Add salt at 2% of the weight of the cabbage and massage it for about 5 minutes until the water begins to release.
Prepare the Cucumber: Chop a cucumber in half and peel from four sides, leaving out the fleshy middle bit. Add the cucumber to the cabbage.
Season: Add pepper and chopped dill to the mixture for an extra burst of flavor.
Pack the Cabbage: Pack the cabbage mixture tightly into the prepared jars, pressing down firmly to ensure it's submerged in its own juices. Cover with parchment paper and weigh it down to keep it submerged.
Fermentation: Store the jars in a kitchen cupboard for 2 weeks, "burping" the jars once a day to release built-up gases.
