Sip Into Summer: Homemade Rhubarb & Ginger Cordial

This year i have been very lucky to have been given lots of seasonal fruit and veg from clients who grow their own. Eating local fresh, seasonal fruit and veggies is just wonderful, it just feels right and is so delicious. One thing i really love though, is that it also sparks creativity as you generally have an abundance of one thing all at the same time, so you’ve got to work out what to do with it all!

This summer, I whipped up a homemade blackcurrant cordial, and rhubarb, ginger, and lemon cordial which i have never done before, and honestly, It's miles fresher and more delicious than anything you'd find in the shops, and it was super quick and easy! It’s also great for anybody who doesn’t drink alcohol as a mocktail over ice, fresh lemon and soda water.

Why Make Your Own?

Taste: Bold, fruity, and zesty—fresh ingredients give your cordial a depth no supermarket bottle can touch.

Waste-Free: Great for using up fruit what may have gone to waste.

Feel-Good Factor: It just feel great to make your own things, epically with the kids -you feel accomplished and it can then lead to exploring what to make next!

How I Made It -

  1. Sterilize a glass bottle in the Oven. Simple wash with water and soap and pop in the oven (180 degrees) for 10-15 minutes. Leave to cool.

  2. Roughly cut 500g of Rhubarb into chunks and wash thoroughly. Pop into a sauce pan.

  3. Cut a big knob of ginger into thick slices and add.

  4. Add 250g of either white or golden caster sugar.

  5. Add the Juice of two lemons.

  6. Simmer on a medium heat for 10-15 minutes.

  7. Strain the mixture through a fine sieve or muslin cloth.

  8. Pour into cool steralized bottle.

  9. Keep in the fridge! It should be fresh for up to a month, but it probably won’t last that long!

That’s it - no preservatives, no fuss. Just homemade goodness with heart.
